These smelled amazing while they were cooking! If you’re looking for a treat look no further. These have no flour so you don’t have to worry about things rising properly, they use a liquid sugar so you can use honey, maple syrup, brown rice syrup what ever you prefer! You can make them with eggs, I made mine with flax eggs and it worked just fine.
This a rather larger recipe you can half it if you want but these don’t seem to last long in my house…
- 3 cups Zucchini, shredded
- 2 cups of Almond Butter ( I buy raw from Trader Joe’s its about the same price as making it and its just almonds )
- 1/2 cup of honey (I do a mix in match for this batch I used 1/3 cup Brown rice syrup, 1/4 molasses, 1/4 maple syrup and a little honey just to round it off, I was finishing bottles…)
- 2 Flax Eggs (2 TBS ground flax, 6 TBS warm water)
- 3 tsp Cinnamon
- 3 tsp Cardamom -optional
- 3 tsp vanilla
- 1 tsp cloves
- 2 tsp baking soda
- 1 bag vegan chocolate chips (fair trade and organic of course!)
mix it all together and pour into oiled pan ( I like coconut oil ) bake at 350 for 30-40 minutes. Test with a toothpick, when it comes out clean your ready!
