The easiest way to make a standard large pot of sauce. Freeze some of this for later, or make a giant tray of something and freeze some for later!

Olive oil or Butter to coat your pot/pan
1 onion, chopped
4 cloves of garlic, minced
1/2 green pepper, chopped
1 stalk celery, sliced
2 lbs tomatoes, diced
1 large can/bottle of tomato sauce
3 TBS tomato paste
1 cup water
Seasoning to taste, the easiest thing is to buy an italian seasoning blend. Or use oregano and basil to keep it simple
Salt and pepper to taste

Warm the oil, brown the onions adding the garlic then bell pepper and celery as the onions cook. About 5 minutes. Stir in the tomatoes and let cook about 10 minutes. Then add the sauce and tomato paste. Stir in water and simmer down for at least an hour. Adjust herbs and seasonings as needed.
